Karime Hayer has brought a taste of southern Mexico to the Yuma Foothills in the form of a coffee shop, the Nichim Café. Nichim which means “flower” in the Mayan language reflects the origin of this all natural coffee.
During a trip to Chiapas, Hayer became enamored with not only the beauty of the location, but also the food and beverages, such as its chocolates and coffees. She immediately knew she needed to bring those special flavors back and share them with other Yumans. Hayer decided one way to do that was to open a coffee shop. “I fell in love with it, and it’s been in the back of my mind since then,” she said.
To make that happen, she went in search of an all-natural, organic coffee, with no bitter aftertaste. “The less ingredients it has, the better,” she stated. Hayer found it in the south of Mexico, with a family business that cares about the environment and the indigenous community who cultivates the coffee. She imports the coffee and is the first to introduce it here in the U.S.
The other half of Nichim Café is Karime's daughter Karime Burruel, who with an extensive background in the food industry, positioned her as the ideal candidate as manager for the café. Karime is always experimenting and pushing the boundaries of what's possible with coffee and tea. From new brewing methods to exciting flavor combinations, she is constantly exploring and innovating new creations. Karime believes that there's always something exciting to discover in the world of coffee. She is the constant smile that greets you at the counter and the love you taste with each sip. Karime is dedicated to providing you with a memorable experience with every visit.
The coffee is certified as organic by the U.S. Department of Agriculture and Food and Drug Administration. Hayer also hopes to become the U.S. distributor for the product.
